The Lasting Bean

Like iron, coffee oxidises. Left out, it turns nasty. For a bag of freshly roasted beans, you're fine to leave it out (not too warm, away from sunlight) if you consume them within a week. But if you're a more intermittent drinker comme moi, whisking them to the freezer is ideal. Any ice crystals that do form will be short-lived thanks to the magic of hot water.1
